Mango Pudding using Agar Agar Powder

After eating mango pudding at my friend’s wedding dinner, I had an urge in learning how to make mango pudding. There are different types of ingredients you can use to make mango pudding. Most people are using unflavored gelatin to make the pudding that will “harden” the pudding. However, I did some research on gelatin. Gelatin is prepared by the thermal denaturation of collagen, isolated from animal skin and bones, with very dilute acid. It can also be extracted from fish skins.

Since vegetarians can’t take gelatin, I went to look for replacement for gelatin and that is the agar agar powder. Agar agar powder helps to solidify the liquid into soft texture, bouncy pudding.

There are two types of attaining agar agar, one is by melting the agar agar stick and the other is buy the ready-made agar agar powder. Buying the ready-made agar agar powder is more convenient. However, when you are buying the agar agar powder, take note at the left hand corner of the packaging highlighted in the picture above. Look at the color of the powder, there are many colors available. To make mango pudding, you can buy yellow or buy normal agar agar powder that has no coloring when cooked. If you had bought the colorless agar agar powder, you will need to buy the mango coloring or yellow coloring to have a tasty look mango pudding.

In addition, to have a more real tasty pudding, it would be good if you can add mango flavour into the pudding. You will smell mango and taste mango pudding at the same time. The mango flavour is very strong. My finger got in contact with the mango flavour liquid, no matter how many times I wash my hand, the mango smell still linger around. Even after eating the mango pudding, my mouth still has a mango smell.

F&N evaporated Filled Milk

The type of evaporated milk can be any brand. For this pudding, I am using F&N evaporated milk. You can choose to use King of Kings brand.

Equipment required to make mango pudding:

  • Pot – to boil the pudding mixture
  • Big mould or small Jelly moulds
  • Stirrer

Recipe of Mango Pudding using Agar Agar Powder


1 packet of Agar Agar Powder (12g)
1900 ml of water
120ml evaporated milk
10 tbsp of sugar
4 drops of Konnyaku Mango Color
1/4 teaspoon Konnyaku Mango Flavour (optional)
1 Mango


  1. Cut the mango into dices.
  2. Measure 1900ml of water and take abit of the water to mix the agar agar powder and leave it aside first.
  3. Boil the rest of the water.
  4. Once the water is boiling, pour the evaporated milk into the pot.
  5. Add sugar, mango color and mango flavour.
  6. Stir well.
  7. Turn off flame and put mango into the pot.
  8. Pour the mixture into the moulds.
  9. Chill to set the moulded mango pudding in the refrigerator before serve.

Finishing: Once mango pudding has settled and chilled, remove from fridge and serve to your guests.


  • You may cut half a cherry to decorate on top of the mango pudding.
  • The mango flavour is optional but it can add on the smell of the mango pudding to make it more tasty.
  • The amount of sugar to add in depends on you, you may want to add more. Taste it while mixing. Do take note that when the mixture is hot, it will definitely taste very sweet, once it has cooled down and chilled, it will not be as sweet.

Notes: This recipe can make about 10 – 15 mango pudding depending on the size of your mould.

Instant Almond Pudding

Other than trying instant mango pudding, I tried instant almond pudding too. The texture of the almond pudding is harder than the mango pudding. This almond pudding, you can serve it in the pudding cup or you can cut into pieces and make another dessert, Logan and Almond dessert.

This time is the same, I used HollyFarms almond flavor pudding. Not everybody likes to eat almond but for this instant packaging. It happens that the almond flavor tastes better than the mango flavor. The way I cooked it is the same and the amount of water added is the same too. If you like almond, do give it a try.

Instant Mango Pudding

Mango Pudding

What is the easiest way of making mango pudding? The answer is either you buy it from supermarket or you make it yourself. Since I am someone who likes to make desserts, definitely I would choose to make it myself.

This time, instead of starting from scratch, I bought an instant mango pudding pack from NTUC. For vegetarians, do take note of the ingredients inside the instant mango pudding pack. Sometimes it contains gelatin which we can’t eat. Whenever it comes to dessert making, gelatin is a very useful ingredient for solidfying the dessert. Too bad, we can’t eat gelatin so the other way is to find replacement for it.

The brand of the mango pudding that I had bought is from HollyFarms. On the box, it provides the instructions for making the mango pudding. With instant powder pack, it isn’t difficult making it. Nowadays, people are always busy and they don’t like to start from scratch, so the manufacturers are very clever, they come up with alot of instant and ready-made food that you can just heat it up or mix with warm water. The way to cook it is just like cooking instant cup noodles.

HollyFarms Mango Dessert

HollyFarms mango dessert is a product of singapore. Manufactured by Sing Long Foodstuff Trading Co. Pte Ltd. Each packet weighs about 120 grams. For your info, one packet of HollyFarms mango dessert only allows me to make 4 cups of pudding. So if you want to make more and depending on your pudding cup size, you may need to buy more packets.

Ingredients in the instant mango pudding:

Sugar, Non-fat dry milk, Mango flavour, Natural vegetable gum, Permitted food flavouring, Color E110

Equipment needed to cook mango pudding:

  • Pot – to cook your mango pudding
  • Stirrer – to stir your mango pudding while cooking
  • Measuring cup – to measure the amount of water required to cook the mango pudding
  • Big tin / Jelly cup – to serve it to your guests

Directions for cooking instant mango pudding written on the box


  1. Put Hollyfarms dessert into boiling water (2 cup or 500ml), continue to boil and stir constantly until dessert dissolve.
  2. Pour into mould and allow to cool, dessert will set in 30 minutes with refrigeration.
  3. Remove dessert from mould & serve with fruit cocktail.


  • You can serve the mango pudding in the a nice jelly cup/mould.
  • To make it looks more appetizing, cut cherries into half and put it on top of the pudding before you serve it.
  • To make it more tasty, add diced mangoes inside the pudding or add in nata de coco.
