Vegetarian Spaghetti

Yum Yum Yum Delicious! It has been quite sometime since I last ate spaghetti. The vegetarian spaghetti sold outside are usually mushroom spaghetti with white sauce and shitake mushroom. But the one that mum always cooks is red in color with baked beans and potatoes inside.

Main equipments required when you cook spaghetti:

  1. 2 pots – one to cook the gravy/spaghetti soup, the other for boiling the spaghetti
  2. Food shredder – to shred the potatoes
  3. Electronic grinder/mixer if you have it – to smash the potatoes or use a fork to smash it

Recipe of Vegetarian Spaghetti


Baked Beans
Button Mushroom
Coriander leaves
Vegetarian Ham
Vegetarian Spaghetti Sauce


Mushroom Seasoning
Vegetarian Oyster Sauce


  1. Cook a hot pot of water.
  2. When the water has boiled, put the spaghetti into the pot.
  3. Peel the potatoes’ skin and shred the potatoes.
  4. Bring the pot of potatoes to boil in another pot.
  5. When the spaghetti is boiled, take out the spaghetti and wash it with tap water. This is to prevent the spaghetti from being sticky later.
  6. After the potatoes are boiled, scooped out the shredded potatoes.
  7. Smash the shredded potatoes manually or electronically.
  8. Once the potatoes are smashed, put it back into the pot of water used to cook the potatoes just now.
  9. Add more water to the pot.
  10. Slice the button mushroom into flat pieces.
  11. Add the remaining ingredients and the seasoning into the pot.
  12. Sliced the ham into long stripes.
  13. Cook scrambled eggs into thin layer and cut it into stripes for garnish.
  14. When the soup is cooked, you are ready to serve.


  • Put the spaghetti and spaghetti gravy on a plate.
  • Put the eggs and hams on top of the spaghetti.
  • Sprinkle basil leaves and coriander leaves on top.
  • Lastly, serve the spaghetti with Tobasco or ground chili.
